We hope everyone had a happy and safe 4th of July! We started out our morning with the annual pancake breakfast at the beach. Mornings at the beach are often cloudy and chilly with the crisp scent of sea salt. Ahh, it relaxes me just to think about it.
After a morning on the beach, we came home and Elena took an awesome nap while I made Mock Apple Slices for our afternoon/evening BBQ with friends. I love this recipe...zucchini that tastes like apple pie, how could you go wrong? I used a couple zucchini from our garden and a few from the store--my first attempt at this family dessert was a success! The party was a lot of fun; here are a couple pictures of Elena and Carl in the pool.
